Pectin is a type of dietary fiber that is abundant in apples, citrus fruits, etc. There are two types, soluble and insoluble, and each has a different function.

Insoluble pectin is an important component of plant structure and exists as a layer surrounding cellulose in the cell walls. It is contained in unripe fruits and becomes soluble as the fruit ripens.

Water-soluble pectin is a binding agent between cells and is found in large amounts in fruit peels. It is also used as a thickening agent and gelling agent in processed foods, a culture medium for microorganisms, and a gastrointestinal medicine.
