What is low-carb bread?
If the Consumer Affairs Agency's low-carb rules are applied to bread, only foods with less than 5g of carbohydrates per 100g of bread can be called low-carb.
In fact, almost all products on the market that claim to be low in sugar do not follow this rule.
We will explain why, but this time, we are not talking about bread that is relatively low in carbohydrates compared to our own products, which is made by adding wheat flour and sugar to soy flour, gluten, and wheat bran, as is common in convenience stores and mass-produced breads.
I will be assuming that no sugar or flour is used and that the recipe is as low in carbohydrates as possible .
Bread is different from baked goods in that it is made by fermenting dough using yeast, and then capturing the alcohol and carbon dioxide released by the yeast in a network of gluten.
(In the case of rice flour bread, amorphous rice flour is used to help it maintain its shape, but rice flour itself contains a lot of carbohydrates, so we will not consider this this time.)
Of course, the gluten that creates the mesh is not limited to wheat gluten, and soy gluten can also be used, but soy flour bread that does not use wheat gluten will not rise,
It is safe to say that there are almost no breads made solely from soy flour, as the result is a hard, baked good.
Therefore, low-carb bread uses soy flour and wheat gluten as its main ingredients (in the case of Fusubon, organic bran is added to this), and other ingredients include eggs, yeast, dietary fiber such as fruit peels, non-metabolizable sweeteners such as erythritol, and fats and oils.
Let’s look at the carbohydrate content of each ingredient.
Carbohydrate content of soy flour
Soybeans and soy flour are relatively low in carbohydrates
Soy flour is made by directly grinding soybeans into powder, so the carbohydrate content is considered to be the same as the carbohydrate content of soybeans.

Carbohydrate content of wheat gluten
According to the 2010 American Diet Certification Examination, the figure is 8.2g. Based on the above, it is safe to assume that the carbohydrate content of 100g of soy flour and gluten is about 8g each.
About carbohydrates in eggs, yeast, dietary fiber, fats and oils, and erythritol
The carbohydrate content of dietary fiber and fats is zero. There is some carbohydrate content from eggs, but it is considered to be almost zero.

According to the data, it weighs about 1.8g.
The total amount of soy flour and gluten combined is 60 percent, so even if the rest is zero carbohydrate, the total carbohydrate content per 100g would be 4.8g.
Even without taking into account the sugar content of erythritol, you can see how difficult it is to reduce the sugar content in 100g of bread to less than 5g.
This discussion completely ignores other factors such as rise, taste, elasticity, uniform mixing, sweetness, etc., so when you take them into account, it is no exaggeration to say that it is nearly impossible to keep the carbohydrate content below 5%. (Theoretically, even if you could make it, it would taste terrible.)
What does low carb mean in low carb bread?
So, what is the logic behind the word "low sugar" that is prominently displayed on packages? This means that the sugar content is low compared to that of regular bread, and low compared to other products of the same company .
So please be aware that this is not an absolutely low-carb bread. It may be something that should be pointed out, but I get the impression that they are somehow avoiding the issue by saying that it is only low in carbs because it is relatively low in carbs.
How much sugar does a typical loaf of bread contain?
Many people probably don't know how much carbohydrate is contained in ordinary bread, so I'd like to share the information with you.

The above is the carbohydrate content of typical breads. It may seem complicated because it is the carbohydrate content per piece, but you can remember that for regular bread, "just under half of the total weight of the bread is carbohydrate."
Croissants may seem like they are low in carbohydrates, but because they have a small overall mass and contain a lot of butter, they are relatively low in carbohydrates.
How to choose low carb bread
Now that we have explained this much, we will explain how to choose low-carb bread.①Measure the total mass (g) of the low-carb bread.
If you measure the total mass of a low-carb bread and it is Xg, then the carbohydrate content of regular bread is about X/2g. It would be easier to understand if the total grams were listed, but most breads don't, so you should measure it.2. Compare the carbohydrate content listed as X/2g
For example, let's say you have a 60g loaf of low-carb bread that contains 15g of carbohydrates.In this case, the carbohydrate content listed is 1/4 of the total, and since regular bread contains about 30g of carbohydrates, this is a 50% reduction in carbohydrates.
3) Choose low-carb bread that is sugar-free and has 1/10 to 1/8 of the total weight of carbohydrates.
Low-carb breads such as Fusubon, which do not use flour or sugar, have a carbohydrate content of about 1/10 to 1/8 of the total volume.
In this case, the carbohydrate content will be 80 to 70 percent reduced compared to regular bread.
Even if you eat 80g of bread per meal, you can keep the carbohydrate content to around 8g to 10g.
If we follow the definition of Lo-Carb, which is 40g or less of carbohydrates per meal, we can consume the remaining 30g of carbohydrates, and it can also accommodate people on a ketogenic diet who limit their carbohydrate intake to 20g or less per meal.

Even if a diet is low in carbohydrates, there is no point if other ingredients are sacrificed.
